    Sugar-free spongecake with peer marmalade

    The very first sugar-free birthday cake we prepared had to meet some special requirements: the birthday girl could not eat nor sugar nor wheat flour... nor dairy products. Now that is a challenge! We resolved it cooking with buckwheat flour instead of wheat flour, using sweetener instead of sugar (though since we discovered stevia we recommend it as a healthier alternative) and home-made peer marmalade to decorate the cake. I received a big hug from the birthday girl for the cake, I think that says all :)

    Thin pancakes with quince jelly and tetilla cheese

    The quince jelly with tetilla cheese is a typical dessert from the west coast of Spain (Galicia). We prepared it with sugar-free whole-wheat thin pancakes and we got a light dessert with a characteristic flavor. In this recipe we added 10 drops of liquid Stevia, but you can prepare the dough without adding any sugar or sweetener, the quince jelly will take care of the necessary amout of sweetness of the dish.
