We recommend to serve it with some noodles or croutons. A remark: we prefer to use fresh chickpeas but you can cut down on preparation time buying pre-cooked chickpeas.

  • Koala Soup

    I guess everybody has his own "very first recipe I was preparing for a year every 2nd night for dinner", well this is ours. The basic ingredients that shouldn't miss are the carrots, celery, onion and chicken breast. On the lazy days when we are not in the mood to cook (that happens even with a Kuiristo...) we simply prepare the soup with some peas and noodles. Thyme is absolutely necessary to give the soup the authentic Koala Soup flavour.

    Chicken broth is the base of a lot of Catalan and Spanish recipes: for example of risottos (for example Chicken and vegetable risotto). In Spain it is very common to use canned broths especially because it is more comfortable and faster, but it is not really healthy... so whenever we have some more time we prepare this really easy chicken broth and keep a few boxes of it in the freezer. To use less salt season with some herbs and spices (normally we use some thyme, black pepper and cumin).
