Aubergine towers
Oven roasted vegetables with melted cheese can be delicious and if you don't overuse the cheese can be a light dish, suitable for the evenings when you don't want to go to bed with your stomach full of a heavy dinner. This time we used goat cheese with the aubergines and added some anchovy fillets to create some contrast in flavours.

Green pea cream soup
In this simple vetegable dish we didn't blend the peas, instead we added some flour and milk to get the smooth cream texture. You should serve the dish while still warm, we recommend to add some fried Vienna sausages, meatballs or a fried egg on the top.

Cauliflower cream soup
This cauliflower cream soup is very light, it doesn't contains any dairy products, and it has a soft taste thanks to the cauliflower. We didn't add too much spices, instead we used an onion to better the taste and you can also add a garlic clove if you like. Our absolute favourite to eat with cream soups is the 100% whole wheat bread, but you can also serve it with some croutons or some fried bacon stripes.

Vegetable stew with Spanish chorizo
This recipe is very similar to the pisto, but we we called it vegetable stew instead because it comes with bacon and Spanish chorizo, not eggs and we also seasoned it with some paprika. You can serve it as a fancy starter for guests or eat it for dinner as it is not a heavy dish.

Vegetable cake
A very simple recipe that we found on this website(link:http://www.pequerecetas.com/receta/pastel-de-verduras/). The vegetable cake is something popular in Spain and we've chosen to prepare one due to its high content of vegetables. We liked it warm with a little bit of tomato sauce but you can also serve it cold.
