Spanish Fideuá

One of our favourite of the Mediterranean cuisine's masterpieces: the "Fideuá". We recommend you to prepare this recipe with high-quality ingredients (above all the fish) because its success depends to a great extent on them. Use a paella pan if you have the chance, or at least a pan which is suitable for the oven. Serve it with Aioli or mayonnaise.

Ingredients

  • 300 g cuttlefish
  • 300 g noodles
  • 200 g crushed tomatoes
  • 200 g prawns
  • 2 garlic cloves
  • 1 onion
  • 1 l fish broth

How to prepare

  1. Chop the onion and garlic and stir-fry with olive oil on low heat until they get tender. Dice the cuttlefish and add it to the pan along with the tomato sauce. Cook for 20 minutes stirring once in a while.
  2. Put the fish broth in a saucepan and cook until it starts to boil, then add the tomato sauce and keep cooking on low heat. Preheat the oven for 220ºC.
  3. In a paella pan add a little bit of olive oil and the noodles. Cook stirring constantly until golden brown. When you start to smell semolina add the shrimp and enough broth to just cover the noodles and cook for 5 minutes more.
  4. After 5 minutes put the paella pan in the oven and cook for 5 minutes more.
