Salmon with vegetables "en papillote"

Here is one really easy but still delicious way to prepare salmon, my favourite fish. Salmon contains protein, omega-3 fatty acids, and vitamin D but is an oily fish so you should consume it with moderation. Serve the dish with some baguette slices or with a little bit of rice if you prefer.

- 500 g salmon loin
- 2 carrots
- 1 onion
- 1 leek
- 1 stalk of celery
How to prepare
- Chop the onion, carrots, celery stalks and the leek into julienne strips.
- Put the veggies in a baking pan and place the salmon on them. Season with salt and black papper and cover all with aluminium foil.
- Put the baking pan in the oven for 15-20 minutes (cooking time depends on the thickness of the salmon loins).
