Lentil salad

Legumes, consumed with moderation, are important to maintain a balanced diet. This salad is one of our recomendations as an alternative to the typical legume stews. A remark: we prefer to use fresh lentils but you can cut down on preparation time buying pre-cooked lentils.

Ingredients

  • 400 g lentils
  • 250 g cherry tomatoes
  • 150 g diced ham
  • 1 onion
  • 1 green bell pepper
  • 1 bag of salad
  • salt
  • olive oil
  • vinegar

How to prepare

  1. Soak the lentils in warm water for 6-12 hours. Drain the lentils and cook them for an hour in salted water.
  2. Cut the onion into rings, the green bell pepper into strips and the cherry tomatoes in half.
  3. Mix the bag of salad, cooked lentils, cherry tomatoes, onion and green bell pepper in a big bowl. Season with olive oil and some Modena vinager (red wine vinegar) and serve with diced dry-cured Spanish ham.
