Desserts made with almond flour are typic in Catalonia. This time we prepared a cinnamon and lemon flavoured cake, another recipe inherited from the family. we recommend to serve it with a little glass of Moscatel.

- 250 g ground marcona almond
- 120 g sugar
- 5 g cinnamon
- 4 eggs
- 1 lemon
How to prepare
- Beat the eggs with the sugar until the mixture doubles its volume (it take more or less 3 minutes for me). Add the almond flour, cinnamon and lemon zest and mix all with a spatula with light movements.
- Preheat the oven for 180ºC. In a cake baking tin spread some margarine and flour (we used a non-stick baking tin that doesn't need any margarine or flour) and add the mixture. Cook the cake for 40 minutes.
