Quick chicken broth

Chicken broth is the base of a lot of Catalan and Spanish recipes: for example of risottos (for example Chicken and vegetable risotto). In Spain it is very common to use canned broths especially because it is more comfortable and faster, but it is not really healthy... so whenever we have some more time we prepare this really easy chicken broth and keep a few boxes of it in the freezer. To use less salt season with some herbs and spices (normally we use some thyme, black pepper and cumin).
Dish type: Soup
- 2 potatoes
- 2 carrots
- 1 onion
- 1 leek
- 1 celery
- 1 kg chicken bones
How to prepare
- Clean the chicken bones and cut the vegetables: the carrots, onion, celery, leek and potatoes.
- Put them in a pot and cover with water. Add some salt, cover the pot and cook for at least one hour on low heat. (The more you cook it the more consistent the broth will be.)
- When the broth is ready let it chill then strain it. You also can assort the vegetables and meat and serve with the broth.
